Number Of Ingredients 10

2 1/2 cup(s) all purpose flour
1 teaspoon(s) baking powder
1/2 teaspoon(s) cinnamon, ground
1/2 teaspoon(s) freshly grated nutmeg
1 1/4 cup(s) sugar
3/4 cup(s) butter, room temperature
1/2 cup(s) eggnog
1 teaspoon(s) rum extract
2 x large egg yolks
1 tablespoon(s) freshly grated nutmeg

Steps:

  • Preheat oven to 300 degrees F.
  • In a medium bowl combine flour, baking powder, cinnamon & nutmeg; mix well. Set aside.
  • In a large bowl, cream sugar & butter with an electric mixer to form a grainy paste. Add eggnog, vanilla & egg yolks & beat at medium speed until smooth. Add the dry ingredients & beat at low speed just until combined. Do not overmix.
  • Drop by rounded tsp onto ungreased baking sheets, 1" apart. Sprinkle lightly with nutmeg. Bake 23 - 25 minutes or until bottoms turn light brown.
  • Transfer to wire rack to cool.
