Copycat KFC Crispy Fried Chicken image

All right, all right! No guarantees on this, but it's as close as it gets right now. Even though KFC tried to crack down and do some damage control to protect their secret, the leaked recipe is reportedly pretty spot-on when it comes to replicating the taste KFC fans hate to love. And that's it, exactly as written, on the back of the note stored in a KFC safe. According to the Chicago Tribune, when they tried the recipe with a few updated modifications to the method of cooking, it was pretty spot-on.

Number Of Ingredients 20

1 - (2 or 3 lbs) cut up chicken
1 quart(s) water
3 tablespoon(s) canning salt (for soaking)
1 cup(s) milk
1 - egg, beaten
12 - secret ingredients, mix with white flour
2 cup(s) unbleached white flour
2/3 tablespoon(s) salt
1/2 tablespoon(s) thyme, dried
1/2 tablespoon(s) basil, dried
1/3 tablespoon(s) oregano, dried
1 tablespoon(s) celery salt
1 tablespoon(s) black pepper
1 tablespoon(s) dried mustard
4 tablespoon(s) paprika
2 tablespoon(s) garlic salt
1 tablespoon(s) ground ginger
3 teaspoon(s) white pepper
1 teaspoon(s) accent (msg)
- soybean oil (no substitutions) for frying

Steps:

  • KFC uses pressure cookers to fry chicken, which can be risky to do at home. If you are using a deep fryer, fry a few pieces at a time for about 20 minutes, covered, turning occasionally. Likewise, if pan frying, cook covered, turning occasionally for about 30 minutes As always with chicken, check the middle of a large piece to check for doneness. Allow to drain on paper towels when cooking is completed.
  • Allow chicken to soak in salted water for 30 minutes. Mix egg and milk in a bowl. Mix flour, and all (12) other seasonings, in another bowl.
  • Preheat deep fryer to 350 F, or place 3/4 inch oil in a skillet over medium heat.
  • Dry chicken with a paper towel. Dredge in flour mixture. Dip into milk-egg mixture, then back into flour mixture. Do this one piece at a time making sure that there is total coverage over entire surface of chicken in each step. ENJOY
