- 1. Preheat your oven to 325 degrees. Place chopped pecans on cookie sheet and toast 8 minutes until it turns a golden brown in color, turning once after five minutes. After toasted, set the pecans aside and let them cool.
- 2. Mix brown and white sugars together in bowl, add butter & mix until smooth. Slowly add honey, eggs, and vanilla until all ingredients are combined.
- 3. In separate bowl sift together AP Flour, cocoa, salt, and baking soda. Add your chocolate chips, 1/2 cup toasted pecans and coconut to the dry mix . Add to the wet and mix until combined.
- 4. Scoop out cookies of desired size onto parchment lined cookie sheet. (I normally use a 1 1/2" scoop). Top each cookie with a few chopped pecans. Bake 10-12 minutes, rotating pan after 6 minutes.
