My family LOVES this dish! Lots of prep, but worth every minute!

Steps:
- 1. Cook cauliflower in boiling, salted water until barely tender, Drain
- 2. While cauliflower cooks, drain the pimiento & dice, dice green onion, mix together & set aside.
- 3. In a large skillet saute onion, mushrooms and peppers in butter until tender.
- 4. Blend in flour, cook until bubbly, then gradually stir in milk, cook until thickened
- 5. stir in salt, cayenne & cheese. Cook until cheese is melted.
- 6. in a 2qt. casserole place 1/2 of cauliflower, pour in 1/2 of sauce, repeat. Cook 30 minutes or until bubbly
- 7. Sprinkle green onion and pimiento mix over the top. Serve! Good left over but does not freeze well.
