POPPY SEED HONEY DRESSING
1/4 C cider vinegar
1 C mayo
1 Tbsp poppy seeds (or more)
1/3 C honey
2 tsp salt
1 tsp black pepper
1 medium cabbage, cored and finely shredded red/or green)
2 large carrots, peeled,julienne
1 bunch scallions, thinly sliced
1/2 C finely minced parsley
4 Fuji apples, peeled, cored julienne

Steps:

  • Prepare the Poppy Seed Dressing, blend Salad: combine all the veggies and fruit and toss with dressing until well blended. Refrigerate at least i hour. Mix salad at least once before serving.
