Steps:
- Heat olive oil in a medium sized pot over medium heat. Rinse and drain quinoa, and saute in oil until it starts to turn golden brown. Add 2 cups water and soy sauce to taste, bring to a boil, cover, and simmer for 15 mins. Add lemon juice, toss with a fork and let cool. In a large bowl, toss quinoa, chopped vegetables, garlic, mint, and seasonings. Chill, and serve with generous dollups of yogurt on top and sprigs of fresh mint.
