COFFEE ICE CREAM PIE image

Yield 1 pie

Number Of Ingredients 13

One 9" pie crust
1 - 1 ½ quarts coffee ice cream
Meringue for Topping
2 egg whites
¼ tsp cream of tartar
3 T sugar
¼ tsp vanilla
Caramel Sauce
½ cup butter
½ cup white sugar
½ cup brown sugar
½ cup cream
1/3-1/2 cup lightly toasted sliced almonds

Steps:

  • Prepare Ice Cream Filling Spread slightly softened ice cream in cooled pie shell and freeze Prepare soft meringue to spread on top of frozen ice cream pie. Beat all ingredients until stiff. Spoon over ice cream and spread to edges - meringue will be an inch or so thick. Sprinkle sliced, toasted almonds on top and bake at 425 for about 5 minutes. Freeze again after meringue is slightly browned on top. Prepare Caramel Sauce Bring all ingredients to a boil Add 1 tsp vanilla. Remove from heat. Spoon warm sauce over wedges of pie.
