Coffee Crumb Cake image

This cake is moist and buttery, with a perfect crumb topping. Great in the morning with a cup of coffee... one of the few times it's acceptable to have dessert for breakfast ;)

CAKE
6 Tbsp unsalted butter, softened
3/4 c sugar
2 eggs
1 1/2 tsp vanilla extract
3/4 c sour cream
1 1/2 c flour
1 tsp baking powder
1/4 tsp baking soda
1/2 tsp salt
CRUMB
8 Tbsp unsalted butter, softened
3/4 c flour
1/4 c sugar
1/4 c packed brown sugar
1 tsp cinnamon
1/8 tsp salt

Steps:

  • 1. Preheat oven to 350.
  • 2. Cream 6 tablespoons of butter and 3/4 cup sugar until light and fluffy. Slowly beat in the eggs, one at a time, beating well after each addition. Beat in the vanilla extract and sour cream until blended.
  • 3. In another bowl, combine 1 1/2 cups flour, baking powder, soda, 1/2 teaspoon of salt. Slowly beat the flour mixture into the batter until blended. Pour the batter into a well greased, 9 inch round pan.
  • 4. Next, combine 8 tablespoons of butter with 1/4 cup brown sugar, 1/4 cup white sugar, 3/4 cup flour, cinnamon, and 1/8 teaspoon salt. Mix together, then crumble the topping with your fingers on the top of your cake.
  • 5. Bake for 45 minutes, or until tester inserted to the center comes out clean.
