Cod Cakes image

Number Of Ingredients 16

4 peppercorns
1 bayleaf
1 lemon cut into eights
1 pound cod or other white flaky fish
2 tablespoons unsalted butter
2 ribs Celery peeled and diced
1 yellow onion, peeled and diced (medium)
2 cloves garllic, peeled and minced
1 tablespoon mayonnaise
2 teaspoons dijon mustard
2 eggs
1 1/2 teaspoons kosher salt
1/2 teaspoon fresh black peppper
2 teaspoons old bay seasoning
1 cup panko bread crumbs
1/2 bunch parsley

Steps:

  • poach fish in 1" of water with lemon wedge, peppercorns and bay leaf, remove and cool
  • empty pan and return to heat. Add butter, add celery, onion and garlic, stir until soft and translucent
  • In small bowl mix together the mayo, mustard, eggs, salt, pepper and seasoning. Add mixture to veggies stir in parsley and bread crumbs
  • flake the fish in large chunks into binding mix, form into 4 - 8 balls. Cover and refrigerate for at least 30 mins.
