Steps:
- poach fish in 1" of water with lemon wedge, peppercorns and bay leaf, remove and cool
- empty pan and return to heat. Add butter, add celery, onion and garlic, stir until soft and translucent
- In small bowl mix together the mayo, mustard, eggs, salt, pepper and seasoning. Add mixture to veggies stir in parsley and bread crumbs
- flake the fish in large chunks into binding mix, form into 4 - 8 balls. Cover and refrigerate for at least 30 mins.
