1 cup cream of coconut
2 tablespoons light corn syrup
4 each egg whites
2 teaspoons vanilla extract
1/2 teaspoon salt
8 ounce unsweetened shredded dried coconut
8 ounce sweetened flaked coconut

Steps:

  • Whisk together cream of coconut, corn syrup, egg whites, vanilla and salt in a small bowl. Combine unsweetened and sweetened coconut in a large bowl. Toss together to break up any clumps. Pour liquid over coconut and mix with spatula until evenly moistened. Chill for 15 minutes. Preheat oven to 375°Fahrenheit. Line a full sheet pan with parchment paper.
