COCONUT JASMINE RICE image

Number Of Ingredients 7

1 cup Jasmine Rice (rinsed with water)
1 1/2 cup water
1 tablespoon sugar
1/4 teaspoon salt
2 Kaffir Lime leaves ( order online and freeze)
2/3 cup coconut milk
1 lime (rind grated and juiced)

Steps:

  • Place dry rice in fine mesh strainer and rinse with cold water. Combine water with sugar and salt. Place water, rinsed rice, and kaffir leaves in a small saucepan with tight fitting lid. Bring to a boil and quickly turn to lowest simmer for 5-8 minutes. Take off heat and keep covered. Before serving mix in coconut milk, grated lime rind, and juice. Place over low heat until heated through, and serve.
