Coconut Custard Pie image

4 eggs
1 1/2 cups sugar
2 tsp cornstarch
1/2 cup melted butter
1 can evaporated milk
1 tsp vanilla extract
1 pkg flaked coconut
2 unbaked (9 inch) pie crusts

Steps:

  • In a large bowl blend eggs, sugar and cornstarch until smooth. Add melted butter, milk and vanilla, mix well. Stir in some coconut (save some coconut flakes for topping).
  • Divide filling into pie shells.
  • Bake at 350 degrees F for 35 - 45 minutes or until firm.
