COCONUT CREAM CAKE (BY CAROLYN) image

Number Of Ingredients 10

1/2 cup shortening 1/2 tsp. salt
1/2 cup butter 1 tsp. vanilla
2 cups sugar 1 cup buttermilk
3 egg yolks 1 2/3 c. flaked
2 cups flour coconut
1 tsp. soda 3 egg whites
Frosting
1/2 cup butter 1/8 tsp. salt
1 (8 oz. ) pkg. cream chese 1 tsp. vanilla
1 box powdered sugar 1/2 cup nuts, chopped

Steps:

  • Cream shortening, butter and sugar. Add egg yolks, one at a time, beating well after each. Sift dry ingredients together and add alternately with buttermilk. Fold in egg whites, which have been beaten stiff. Pour into two greased and floured 9 inch pans. Bake 25 minutes at 350, or until done. ( I had to bake it for 35 minutes.) Mix frosting together and spread on cake.l
