Cocoa Fudge image

This is my favorite fudge. I have been making it for over 35 years. I can't have the holidays without it.

Time 40m

Number Of Ingredients 7

3 c sugar
2/3 c cocoa, unsweetened
1/8 tsp salt
1 1/2 c evaporated milk
1/4 c margarine
1 tsp vanilla extract
1 1/2 c pecans, in pieces

Steps:

  • 1. Combine all ingredients in medium size pan.
  • 2. Bring to boil continue cooking till soft ball stage. 234 degree soft ball stage.
  • 3. Stirring ocassionaly to keep from burning.
  • 4. Remove from heat add butter,vanilla and pecans.
  • 5. Do not stir for 3-5 minutes
  • 6. Stir and pour in buttered pan
  • 7. cool then cut in squares
