Steps:
- Preheat to 350. Butter 8 2/3 cup souffle dishes. Sprinkle with sugar. Bring milk and 1 cup sugar to simmer, stirring occasionally, till sugar dissolves. Reduce to low. Add chocolate and sir till smooth. Pour into large bowl and cool 10 minutes. Beat whites to soft peaks. Gradually add remaining 1/4 cup sugar and beat till stiff but not dry. Whisk yolks into chocolate. Whist 1/4 of whites into chocolate to lighten. Fold in remaining whites. Divide among dishes. Bake till souffles puff, about 16 minutes. Sift powdered sugar over souffles.
