CITRUS AVOCADO SALAD image

Number Of Ingredients 10

3 large navel oranges
2 Haas avocados, cubed
1 bunch scallions, finely chopped
1/2 cup cashews, preferably unsalted
Dressing:
1 tsp sesame oil
1/4 cup olive oil
2 Tbsp rice wine vinegar
4 Tbsp fresh orange juice
Salt and pepper to taste

Steps:

  • Cut oranges in half and hallow out. Cut orange sections into bite-sized pieces; place in a bowl. Add avocados and scallions; whisk together dressing ingredients and add until salad is very lightly covered. Add cashews; spoon back into empty orange halves. Serve.
