Cinnamon Honey Mashed Sweet Potatoes and Banana image

I love to serve this all fall, but it also makes a wonderfully sweet Thanksgiving side. If you are cooking for a baby, you can optionally leave out the honey and add an additional tablespoon of dark brown sugar or scald the milk with honey it in to cook the honey so it is baby safe. My youngest is 11 months currently, and he had this last week, without consequence. Prepared in the above mentioned way.

Number Of Ingredients 12

6 - sweet potatoes, diced and boiled (i leave the skin on)
1 - banana, chopped
1 cup(s) cream or whole milk
2 tablespoon(s) honey
1 tablespoon(s) dark brown sugar
1 teaspoon(s) vanilla
1 teaspoon(s) cinnamon
3 tablespoon(s) butter
1 tablespoon(s) sour cream
1/2 teaspoon(s) seasoned salt
1 pinch(es) cayenne
1/4 cup(s) candied walnuts, chopped (optional)

Steps:

  • This works better if the sweet potatoes are recently boiled.
  • Put all the ingredients, save the candied walnuts (optional) in a pot. Heat on low medium.
  • When the butter started to melt (10 to 15 minutes), stir until the sugar and honey are both dissolved.
  • Use either a potato masher or an immersion blend to puree mix. Cook for an additional 5-10 minutes.
  • Convert to a serving dish. Optionally sprinkle with candied walnuts. Enjoy!
