Cinnamon Bread image

My mother-in-law made this bread as a special treat and gave every family member a loaf at Christmas.

Number Of Ingredients 16

COMBINE & THEN COOL TO LUKEWARM
1 c milk (scalded)
1/4 c sugar
1/4 c butter
DISSOLVE
1 pkg yeast
2 Tbsp warm water
1 tsp sugar
COMBINE MILK MIXTURE & YEAST THEN ADD EGG
1 egg
ADD
4 c flour
SWIRL MIXTURE:
2 Tbsp brown sugar
2 Tbsp sugar
2 tsp cinnamon

Steps:

  • 1. Combine milk, sugar and butter in small saucepan and heat until scalded.
  • 2. While milk mixture is cooling down, dissolve yeast pkg. in 2 T. warm water with 1 teaspoon sugar.
  • 3. In large bowl, combine the cooled milk mixture and yeast mixture.
  • 4. Add egg and beat well.
  • 5. Add 4 cups flour. Turn out onto lightly floured board. Kneed for 2 minutes.
  • 6. Allow dough to rise 15 minutes.
  • 7. Roll dough into rectangle about 1/4" thick. Sprinkle swirl mixture evenly on top of rolled dough.
  • 8. Roll dough up and turn ends under. Place in a greased loaf pan.
  • 9. Let rise 1 hour.
  • 10. Bake 40 minutes. Brush the top with melted butter (Optional). Take out of pan and cool on wire rack.
