Cider Pumpkin Bread image

Moist and delicious. My boyfriend eats it for breakfast!

Number Of Ingredients 10

2 c brown sugar, firmly packed
2 c pumpkin puree
2 large eggs
1 c canola oil
1 c apple cider
4 1/2 c ap flour
2 Tbsp baking powder
1 Tbsp cinnamon, ground
1 c raisins
1 c walnut pieces

Steps:

  • 1. combine first 5 ingredients with a whisk until well blended.
  • 2. whisk together dry ingredients in a seperate bowl.
  • 3. Add dry to wet and mix until moistened. Do not overmix!
  • 4. Stir in raisins and walnuts.
  • 5. Pour evenly into 2 greased loaf pans.
  • 6. Bake in a preheated 350 degree oven for 50 minutes or until toothpick inserted in center comes out clean.
  • 7. Cool, remove from pan, slice and enjoy. It's nice to keep one and gift the other!
