Christmas Cranberry Muffins image

This recipe comes from a little paperback cookbook I picked up called Family Living Our Favorite Mixes This recipe was written to give as a gift mix. I have made it as muffins and Mary (photosister) makes it in loaves. I add more orange zest because I love it.

Number Of Ingredients 9

2 c flour
1 c sugar or splenda
1 tsp baking soda
1/2 tsp salt
1/2 c chilled butter cut into pieces
1 c sweetened dried cranberries
1/2 c pecans or walnuts toasted (optional)
1/2 Tbsp orange zest chopped fine
2 c sour cream

Steps:

  • 1. In a medium bowl, combine flour, sugar, baking soda and salt. Using a pastry blender, cut butter into dry ingredients until mixture resembles coarse meal. Stir in cranberries, nuts and orange zest.
  • 2. Divide mix into 2 resealable plastic bags. Store in refrigerator. Give with baking instructions.
  • 3. TO BAKE: In a medium bowl, combine 1 c sour cream and 1 bag muffin mix (2 1/2 cups) just until moistened. Fill paper-lined muffin cups full of batter. Sprinkle with granulated sugar. Bake in a 400 degree oven 18-20 minutes or until a toothpick inserted in center of muffin comes out clean and tops are golden brown.
