CHOCOLATE ZUCCHINI CAKE WITH PEANUT BUTTER FROSTING image

1/2 cup oil
1/2 cup butter
1 3/4 cup sugar
2 eggs
1 tsp vanilla
1/2 cup sour milk
2 1/2 cups flour
1/2 cup cocoa
1 tsp soda
1/2 tsp baking powder
1/2 tsp cinnamon
1/2 ground cloves
2 cups grated zucchini
Peanut Butter Frosting
1 Cup peanut butter
2/3 cup butter
2 Tbsp milk
1 tsp vanilla
3 cups powdered sugar
add extra milk if too stiff

Steps:

  • Cream together 1/2 cup oil, 1/2 cup butter, 1 3/4 cup sugar. Add 2 eggs, 1 tsp Vanilla, 1/2 sour milk. Sift 2 1/2 cups flour, 1/4 cup cocoa, 1 tsp soda, 1/2 tsp baking powder, 1/2 tsp cinnamon, 1/2 ground cloves add to above ingredients. Stir in 2 cups grated zucchini. Spread into 9 X 13 greased floured pan, sprinkle 1 cup chocolate chips. Bake 45 min at 350. Peanut Butter Frosting Beat 1 Cup peanut butter, 2/3 cup butter, 2 Tbsp milk, 1 tsp vanilla, 3 cups powdered sugar add extra milk if too stiff
