CHOCOLATE MAYO CAKE--Lyn* image

We used to make this cake in the 50's and told the boys that mayonnaise was in it so they wouldn't eat it! It worked until our dad tried it and ooohed and awhhhed...we were busted! LOL It is now our daughter's birthday cake, and our son's watch out grand kids,,,we may have a new birthday cake favorite in our family. So glad it...

Number Of Ingredients 14

1 c cane sugar
2 c all purpose flour
1/2 c cocoa powder (i use hersery's)
1 tsp baking soda
1/4 tsp salt
1 c mayonnaise (i use store brand not salad dressing)
1 1/2 c water, cold
LYN* FAMILY SECRET CHOCOLATE FROSTING
1 box powdered sugar (3 3/4 cups)
1 tsp salt
1/3 c cocoa powder (i use hersery's)
1/3 c butter, softened
1 tsp pure vanilla extract
2 Tbsp boiling water (little more as needed)

Steps:

  • 1. Turn on oven to 350 degrees. Butter 9x13" pan. Or Cupcake liners. Or 2 8" round cake pans.
  • 2. Mix together dry ingredients in large mixing bowl. Stir in water and mayonnaise. Beat 3 minutes.
  • 3. Pour into prepared pan and bake 25 to 35 minutes until a toothpick comes out clean. Cool on wire rack. CUPCAKES bake 15 to 20 minutes or until toothpick comes out clean,
  • 4. FROST with Lyn*'s family secret chocolate frosting. Put all ingredients for the frosting in small mixing bowl; mix until blended adding a Tbsp of boiling water as needed to thin, BEAT well. Top with coconut or nuts if desired.
