Chocolate Cranberry Fudge Cake image

2/3 cup(s) sem-seet chocolate chips
1/2 cup(s) light butter or margarine
1 ounce(s) unsweetened chocolate
1 cup(s) ocean spray whole or jellied cranberry sauce
1/2 cup(s) sugar or stevia
2 eggs
1 teaspoon(s) vanilla
1/4 cup(s) flour
1/2 teaspoon(s) baking powder

Steps:

  • Preheat oven to 325F. Line an 8 inch round pan cake pan with foil. Coat foil with cooking spray.
  • Dust pan flour, tap to remove excess. Microwave chocolate chips, butter, and unsweetened chocolate in a large microwave-safe bowl on high for a minute. Stir until smooth.
  • Microwave for 30 more seconds if necessary to melt chocolate.
  • Add cranberry sauce and sugar, mix well. Add eggs, vanilla, flour, and baking powder; mix well. Pour batter into the prepared pan.
  • Bake for 40 minutes or the center is set and a toothpick comes out clean. Cool in pan for 30 minutes. Refrigerate for one hour or until cold. Adding icing or cool whip as desired.
