Chipotle Shredded Pork image

Great for tostada's, taco's, burrito's or just as a sandwich.

2 1/2 lb pork shoulder roast
1 1/2 Tbsp olive oil
8 oz tomato sauce
1/2 c water
1 small yellow onion (thinly sliced)
3 canned chipotle peppers in adobo sauce (chopped with seeds)
4 clove garlic (minced)
2 tsp ground cumin
1/ tsp ground coriander

Steps:

  • 1. Trim fat, season with salt and pepper. Heat pan with olive oil and brown all sides of meat. Place browned meat in a slow cooker. Combine tomato sauce, water, onion, chipotle peppers, garlic, cumin and coriander. Pour over roast. Cook on high for 5 hours or low for 8-10.
  • 2. Remove pork shoulder from slow cooker, set aside. Strain and reserve cooking liquid. Using forks shred pork. Stir reserved cooking liquid to shredded pork.
