Chipotle-Glazed Meatloaf Sandwiches image

4 seeded hamburger buns, lightly toasted
4 slices Chipotle-Glazed Meatloaf with Sweet Potatoes, cold or warmed
1/4 cup mayonnaise
Freshly ground pepper
Green-leaf lettuce leaves, thinly sliced red onion, fresh cilantro sprigs, and lime wedges, for serving

Steps:

  • Place buns on plates; top each bottom half with a meatloaf slice and spread mayonnaise evenly on top half. Season with pepper. Divide lettuce leaves, onion, cilantro, and lime wedges among plates; serve.
