Chimichurri Chicken image

OK, all you garlic lovers, here's your dish! Modified this from a recipe I saw in a local magazine, and found it to be exceptionally tasty. I used chicken tenders, but any cut would work.

Number Of Ingredients 15

MARINATE
2 limes, juiced
1/4 c olive oil
3 clove garlic, minced
1 Tbsp cumin
1 tsp pepper
1/2 tsp salt
CHIMICHURRI SAUCE
1 bunch cilantro, fresh
6-8 clove garlic
1 tsp salt
1 lime, zested and juiced
5 Tbsp olive oil
MEAT
4-6 chicken breast halves, skinless and boneless or equivilent chicken tenders

Steps:

  • 1. Prepare marinate by whisking together lime juice and next five ingredients.
  • 2. Combine marinate and chicken in a large bowl, cover and chill for two hours.
  • 3. Prepare sauce by processing all ingredients in a food processor until smooth.
  • 4. Remove chicken from marinate and discard marinate. Grill chicken over medium-high heat, until juices run clear, about 4-5 minutes per side.
