Number Of Ingredients 10

2 medium onions, chopped
1 clove garlic, minced finely
2 cans mild, chopped green chilies
2 cans stewed tomatoes
2 stalks fresh celery, chopped
fresh cilantro sprig (optional)
salt and pepper to taste
1 dozen flour tortilla, quartered and softened in hot oil
2 pounds grated Monterey Jack cheese
3 cups sour cream for garnish

Steps:

  • Simmer all ingredients except tortillas and cheese. Salt and pepper to taste. Heat oil; dip pieces of quartered tortilla in hot oil until softened. Layer tortillas, sauce, and cheese to top of a 9x13-inch casserole dish. Place in oven at 350° for 15-20 minutes to heat thoroughly and melt cheese. Cut through like a cobbler and serve with sour cream on top. A wonderful brunch dish! (Can be prepared ahead of time and refrigerated up to 2 days. Heat at 350° for 1 hour to serve.) Fun Fact: The Lyndon B. Johnson Space Center (JSC) is the National Aeronautics and Space Administration's center for human spaceflight activities. The center, originally known as the Manned Spacecraft Center, opened in 1963. On February 19, 1973, the center was renamed in honor of the late U.S. president and Texas native, Lyndon B. Johnson. The center consists of a complex of 100 buildings on 1,620 acres located in the Bay Area of southeast Houston, Texas. JSC is home to the U.S. astronaut corps and is responsible for training astronauts from both the United States and its international partners. JSC is one of ten major NASA field centers.
