Chicken & Vegetables Over Biscuits image

This is a good chicken dish and easy to make.

2-3 boneless, skinless chicken breasts
4 c water
1 Tbsp chicken bouillon granules
1 can(s) cream of potato soup
1 bag(s) mixed vegetables, frozen
1 Tbsp parsley flakes
1 tsp dill, dried
salt & pepper, as needed
4 biscuits, your favorite

Steps:

  • 1. In a large saucepan, boil your chicken breasts in bouillon until cooked through about 30 minutes. Remove chicken let it cool a bit. Then tear it into chunks.
  • 2. Keep about 2-3 cups of your chicken stock in the pan and add your chicken, soup, vegetables, parsley, dill, and Salt & pepper.
  • 3. Let this cook on medium heat for 30 minutes or until creamy and bubbly. Split you biscuits open and serve mixture over the top. This serves 2 nicely.
