Chicken Sausage w/ potatoes&peppers,onions image

Number Of Ingredients 11

1 lb chicken sausage
6 small potatoes, cut in wesges
1 medium sweet onion sliced
1 each/medium bell peppers(3 different colors)
4 clove garlic halved
5 Tbsp olive oil
1 pinch salt and pepper
1 pinch oregano, dried
1 pinch basil, dried
2 Tbsp parsley, italian chopped
2 medium chicken breast filets

Steps:

  • 1. Using a large skillet,sauté the onions,then add the garlic in three of the five tablespoons of oil followed with the assorted bell peppers. Sauté until just tender. Remove with a slotted spoon and start searing the chicken breast.Brown the chicken on both sides,remove and slice the chicken into strips thinly,add to the peppers.
  • 2. Now you can add the two remaining tablespoons of olive oil and brown the sausage well,slicing on the bias when it's done,add to the peppers and chicken.
  • 3. For the roasted herb crusted potato,follow my recipe I have posted,add to the mixture when done. Season with the herbs and spices,toss and serve with freshly grated cheese! Enjoy!:) Keep in mind you will have to adjust the ingredients as you are using less potatoes.
