Steps:
- Rinse chicken. Put in large pot about 1/2 full of water with salt & pepper. Bring to boil. Cover & simmer about 1 hr. until chicken are tender. Strain and save broth. Cook chicken & debone. Make a roux with oil & flour. Add veggies and saute on low until soft. Add water to broth to measure 1 1/2 gallons. Add to pot. Bring to boil. Add seasonings, sausage & bouillon. Cook 1 hor or more on simer. Skim fat off top. Add deboned chicken. Simmer 30 min more. Add parsley & green onion tops if desires and cook 5 more min. Serve over rice.
