Chicken Monterey image

Had this at a friend's house for dinner, it was so good I had to have the recipe. Now people are requesting from me.

1/4 c flour
1 1/4 envelope taco seasoning
1/4 c butter, melted
1 c tortilla chips crushed
1 lb chicken tenders
2 Tbsp minced onion
1 Tbsp canola oil
2 Tbsp flour
dash(es) kosher salt
1/4 tsp hot pepper sauce
1 can(s) evaporated milk
1 tsp lemon juice, fresh
1 c monterey jack cheese, shredded
1/2 c black olives, sliced

Steps:

  • 1. Mix flour and taco seasoning mix. Roll chicken in seasoning mix, then melted butter and then crushed tortilla chips. Place in a sprayed casserole dish.
  • 2. Make cheese sauce. Saute 2 tablespoons onion in 1 tablespoon oil. Add 2 tablespoons flour and dash of salt. Stir in 1 can evaporated milk and 1/4 teaspoon hot pepper sauce. Bring to a boil and cook 1-2 minutes. Add 1 tablespoon lemon juice, 1 cup Monterey Jack cheese and 1/2 cup black olives. Cook until cheese melts.
  • 3. Pour cheese sauce over chicken and bake for 50 minutes at 375-degrees. OLE!
