Steps:
- Melt 2 tbs butter in a heavy large skillet over medium heat. Add onions, tomatoes, bell peppers and sqash. Saute until vegetables are tender, about 8 minutes. Stir in garlic, pepper, thyme and poultry seasonings. Cook 1 minute. Add chopped green onions, stock, catsup, and 2 tbs soy sauce and cook 5 minutes. Rub chicken with remaining 1 tbs soy sauce. Melt remaining 2 tbs butter in heavy large skillet over medium heat. Add chicken and cook until golden brown and cooked about 4 minutes per side. Transfer to plates. Top with vegetables. Put rice and plates and also top with vegetables.
