- 2. There ain't nothing better than a Texas Chicken Fried Steak. Mashed Potatoes and green beans and yeah, plenty of peppery gravy. This is as good as it gets. A hint on the battering. It is a two-hand process. Use one hand for dry flour and the other for the egg wash. With flour hand drop in egg wash and use other hand to coat and then remove and drop in flour, then use flour hand to dredge in flour. Result: a perfect coating that isn't gummy, but is very yummy.
