Chicken Fried Steak image

One of my favorite fried things is Chicken Fried Steak. You can find them on any corner restaurant here in Texas. This is my version. These are great served with mashed potatoes and gravy, OR on hamburger buns as a sandwich!

Number Of Ingredients 8

4-6 cubed steak
3 c flour
2 eggs
2 c milk
**granulated garlic
**granulated onion
**black pepper, salt opt
**canola for frying

Steps:

  • 1. Most importantly, generously season all ingredients; flour, egg dip, and meat.
  • 2. I use pie plates. Place flour in one. Mix eggs and milk together and place in another pie plate.
  • 3. I like to double dip mine. After seasoning everything lightly flour meat, then dip in egg/milk dip, then flour again, then egg/milk dip again, and flour again. This gives you that wonderful crust.
  • 4. THIS IS MY METHOD FOR COOKING THESE: I put enough oil in my skillet to totally submerge the meat, like deep frying without a deep fryer. I have an electric stove and I place the heat on 6. Make sure your oil is good an hot (but not too hot)before putting meat in. If you drop a little flour in the oil and it starts sizzling, you know it's hot enough. Don't overcrowd your pan. My steaks were pretty big so I only placed two in the pan at one time. MY SECRET: after placing the meat in, turn (flip) your steaks every 2-3 min. until they are beautifully brown. Mine took about 12-15 min. each.
