Chicken Bacon Burgers with Cherry-Chive Mayonnaise image

CHERRY-CHIVE MAYO
•2/3 cup Smucker's® Orchard's Finest® Michigan Red Tart Cherry Preserves
•1/2 cup regular or low-fat mayonnaise
•2 tablespoons chopped fresh chives
BURGERS
•Crisco® Original No-Stick Cooking Spray
•1 tablespoon Crisco® Pure Olive Oil
•1 cup peeled, cored and finely chopped Jonathan apple
•1/2 cup finely chopped sweet yellow onion
•2 1/2 teaspoons Montreal steak seasoning, divided
•3/4 cup plain panko bread crumbs
•1 pound ground chicken
•6 slices bacon, cooked and crumbled (1/2 cup)
•1 large egg
•2 tablespoons Dijon mustard
•5 slices provolone cheese
•5 sourdough or original English muffins, split and toasted
•Red-leaf lettuce leaves and thinly sliced red onion

Steps:

  • COMBINE preserves, mayonnaise and chives in small bowl; mix well.
  • HEAT oil in large skillet over medium-high heat. Add apples, onions and 1 teaspoon steak seasoning. Cook and stir until softened, about 5 minutes. Stir in bread crumbs. Transfer to large bowl. Cool 10 minutes. 3COAT grill grate with no-stick cooking spray. Heat grill to medium-high. Crumble ground chicken over cooled apple mixture. Add bacon, egg, mustard, steak seasoning and remaining 1 1/2 teaspoons steak seasoning; mix well. Shape into 5 patties.
  • GRILL 10 minutes or until internal temperature reads 170°F., turning halfway through cooking time. Top each pattie with 1 slice cheese; grill 1 minute or until melted.5LAYER lettuce leaves, burger patties, Cherry-Chive Mayo and red onion slices on bottom half of English muffins. Top with remaining muffin halves. Serve immediately.
