CHICKEN AND SAUSAGE CACCIATORE image

Number Of Ingredients 17

6 chicken thighs
6 sausages
1 medium onion, chopped
2 cloves garlic, minced
1 stalk celery, shaved and chopped
1 red pepper, chopped
1/2 lb mushrooms, cleaned, stemmed and quartered
1 C wine (red or white)
1 t dried oregane
1/4 C fresh parsley, chopped
pinch of red pepper flakes
1.25 t fresh rosemary, chopped
28 oz can chopped tomatoes
Dried tomatoes and/or tomato paste, optional
Broth
1/2 C fresh basil, chopped coarsely
1 C pitted olives (optional)

Steps:

  • Saute vegetables in olive oil; brown chicken and sausages. Put all ingredients other than basil and olives into crockpot; may need to augment liquid with broth or water. Cook at low 4 hours for boneless thighs or longer for bone-in thighs. May wish to remove chicken and sausages from liquid and reduce liquid + vegetables prior to serving OR may wish to cook liquid and vegetables to smooth flavors prior to adding chicken and sausages. Sprinkle with basil and olives (if using) prior to serving. Serve over soft polenta or pasta.
