Chicken and Dumplings image

My grannies recipe ,in the recipe i use the term hen for chicken, thats, what my grannie called it. On her little farm in the mountains she had a "chicken coupe" and she would say to me....goin out to get a hen for supper. She was a fine lady with good Christian values.

Number Of Ingredients 7

1 - whole hen
- salt and pepper to taste
3 cup(s) self rising flour
1 teaspoon(s) salt
1 cup(s) water
1 - egg
6 to 8 cup(s) chicken broth

Steps:

  • In a large pot boil the hen in water for 2 hours.Add about 8 cup water. Add additional water as needed. Drain hen reserving the broth. While boiling the hen i like to skim the fat that rises to surface. Remove hen, cool and cut hen into pieces.
  • For the dumplings....in a large bowl, sift together the flour and salt. Gradually add the water. Stir in egg. Knead the dough throughly and roll out onto a floured surface. Cut the dough into strips about 1 1/2 inch strip and drop in boiling chicken broth. Cover and simmer about 5 to 10 minutes.
  • Add more salt and pepper to taste.
