CHICKEN AND APRICOT TAGINE image

Number Of Ingredients 12

1/2 cup olive oil
3 medium onions, chopped (about 1 1/2 cups)
1 teaspoon salt
1 teaspoon ground ginger
1 teaspoon ground coriander
1/2 teaspoon ground cinnamon
1/2 teaspoon ground cumin
1/2 teaspoon ground turmeric
1/4 teaspoon saffron threads, crumbled (optional)
2 (3 to 3 1/2 pound) chickens, in pieces
1 cup dried apricots
1/4 cup slivered almonds (optional)

Steps:

  • Soak the apricots in water to cover until soft. Drain. In a large pot, combine the oil, onions, and spices. Add the chicken, tossing to coat. Add the apricots. Cover and cook over high heat for 15 minutes. Add enough water to barely cover the chicken. Bring to a boil, cover, reduce heat to low, and simmer for 45 minutes, stirring occasionally, or until very tender. The sauce should be a thick gravy. If not, uncover and simmer until reduced. If too thick, add more water. Serve over couscous or rice.
