Couecous is one of my favorite things. One of the reasons for this is it's versatility. It can be a side, main, dessert or snack. What ever way it's used it's always yummy.

Steps:
- Bring the skim milk and almond milk, splenda/ sugar, almond extract and salt to a simmer in a saucepan over medium heat.
- Add the whole-wheat couscous, dried cherries and cinnamon stick. Cover and cook 2 minutes on low.
- Remove from the heat and let sit, covered, 8 minutes.
- Fluff with a fork, remove the cinnamon stick and divide among bowls. Top with toasted sliced almonds and honey, if desired.
