Cherry Cake with Sauce image

Number Of Ingredients 16

1/4 cup shortening
3/4 cup sugar
1 egg
1 1/2 cups flour
2 teaspoons baking powder
1/2 teaspoon salt
1/2 cup milk
1/4 teaspoon almond extract
2 cups sour cherries (well drained, reserve juice)
1/2 cup chopped walnuts

Sauce:
reserved cherry juice with enough water to make 1 cup
3/4 cup sugar
2 tablespoons cornstarch
sweetened whipped cream for garnish, if desired

Steps:

  • Cream shortening, sugar, and egg. Sift dry ingredients together and add to shortening mixture, alternating with milk. Add flavoring. Fold in cherries and nuts. Bake in greased 9-inch baking dish for 30-35 minutes at 375°. Sauce: Mix juice mixture with sugar and cornstarch. Cook slowly, stirring while cooking, until thickened and clear. Serve sauce over individual pieces of warm cake. Garnish with whipped cream, if desired.
