Cheesy Veggie Home Fries image

Cheesy Veggie Home fries get a makeover with this delicious, hearty version that has been lightened up with lots of crispy, crunchy veggies that even the pickiest eaters won't turn down!

Number Of Ingredients 8

1 large onion, diced
2 tbsp olive oil, ghee, or clarified butter
2 large russet potatoes, washed well and diced into 1" squares
1 large zucchini, washed well and diced into 1" squares
1 large bell pepper, halved and diced
½ cup sharp cheddar cheese
salt and pepper to taste
¼ cup green onions

Steps:

  • In a large cast iron skillet, melt butter or heat oil until shimmery.
  • Add onions and cook until browned.
  • Set aside.
  • Add potatoes, cook on medium high until browned.
  • Remove potatoes.
  • Add vegetables and cook on medium high until browned.
  • Add onions and potatoes back to pan, stir.
  • Add salt and pepper to taste, and top with cheese and green onions.
  • When cheese is melted, remove from heat and serve!
