Cheesy Potatoes O'Brien Casserole image

Cheesy potato deliciousness! Great side dish with baked ham. Can be made with leftover ham pieces as well for a "scalloped potatoes" type casserole. Buttermilk can be substituted by using 1 c sour cream and about 1/2 c milk to thin it out to a pourable consistency.

1 (2 lb) package frozen O'Brien potatoes
1 cup buttermilk
2 cups shredded marble-jack cheese
4 tablespoons butter
salt
pepper
garlic powder
paprika
2 -3 tablespoons olive oil to fry potatoes

Steps:

  • Preheat oven to 350 degrees.
  • Spray casserole dish with cooking spray.
  • In a large skillet, heat the oil and fry the potatoes until they brown lightly. Add seasonings to your taste (salt, pepper, garlic powder, paprika) while they are cooking.
  • In a bowl, combine buttermilk and 1 cup of cheese.
  • Pour buttermilk mixture over the hash browns while in the skillet and stir together until mixed.
  • Spread potatoes in casserole and top with remaining cheese.
  • Cover and cook for 30-45 minutes or until cheese is bubbly and beginning to brown.
