These Cheesy Pepper Quesadillas ensure you'll have a vegetarian option at the cookout. (Which is not to say they'll be safe from the meat-eaters!)

1 red pepper, cut into thin strips
1 pkg. (7 oz.) KRAFT 2% Milk Shredded Colby & Monterey Jack Cheeses
1 green onion, sliced
6 flour tortillas (6 inch)

Steps:

  • Cook peppers in large skillet sprayed with cooking spray on medium-high heat 4 to 5 min. or until crisp-tender, stirring frequently.
  • Top half of each tortilla with cheese, peppers and onions; fold in half to enclose filling.
  • Spray skillet with additional cooking spray. Use to cook quesadillas, in batches, 2 to 3 min. on each side or until crisp and lightly browned on both sides. Cut into wedges to serve.
