A recipe that I came up with, as I continue my low carb way of life! I wanted something with a little bite to it...savory and something easy and satisfying any time of the day! My family even loves them. Add your favorite spices, I just added salt and some red pepper flakes for added heat. Make it your own!

Steps:
- Preheat oven to 325 degree F. Spray a 9 inch dish with non stick cooking spray. In a bowl, beat eggs, add red pepper, seasonings, onion. Spread chilies on bottom of dish.
- Pour egg mixture over chilies.
- Sprinkle evenly with cheese.
- Bake 25 - 30 minutes or until egg is puffed around the edges and cooked in center.
- Cut and serve with salsa! Add more salt if needed.
