Cheesy Croissantwich image

YUM! This was really good! More of a gourmet sandwich.

Number Of Ingredients 12

6 tablespoon(s) mayonnaise
2 tablespoon(s) mustard
2 clove(s) garlic, minced
1 teaspoon(s) rosemary sprigs, fresh, chopped
- salt, to taste
4 large croissants
4 tablespoon(s) sun dried tomatoes, oil-packed, drained & chopped
6 ounce(s) brie cheese, spreadable
6 ounce(s) swiss cheese, shredded
4 ounce(s) smoked turkey, deli-sliced
8 slice(s) bacon, cooked crisp, divided (optional)
- baby spinach, (optional)

Steps:

  • Mix together mayonnaise, mustard, garlic, rosemary & salt.
  • Halve the croissants. Place bottom 1/2 of each on surface, cut side up. Spread 2 Tbsp of mayo mixture on bottom halves; top with 1 Tbsp sun dried tomatoes on each.
  • Spread brie on top halves & swiss & turkey among the bottom halves. Top with remaining croissant halves, cut side down.
  • Heat large nonstick skillet over medium heat for 2 minutes. Add sandwiches. Cover; cook 2 - 3 minutes until browned. Turn sandwiches, pressing firmly with spatula to flatten slightly. Cover; cook 2 - 3 minutes until browned. Turn sandwiches once more; press with spatula again. Cook 1 minute; remove from pan. Cool 5 minutes before serving.
