Cheesy Chicken Rotini image

Mmmmmmmmmmm!

Number Of Ingredients 6

1 1/2 pound(s) chicken breast halves, skinless & boneless, cut into 1
2 cup(s) water
3 cup(s) rotini pasta
1 - 16 oz. package(s) mixed vegetables (your choice), frozen, thawed (i use california sytle - broccoli, cauilflower & carrots)
1 - 10 oz. can(s) ro*tel diced tomatoes & green chilies, undrained
1/2 pound(s) velveeta, cut into 1/2

Steps:

  • (SEE NOTE) Spray skillet with cooking spray. Add chicken, cook for 5 minutes or until no longer pink.
  • Add water & bring to boil. Once boiling, add rotini; stir. Cover, let simmer on medium low heat for 10 minutes.
  • Add vegetables, ro*tel & velveeta. Cover, cook for 5 - 7 minutes; stir occasionally.
  • NOTE: Or you can use an rotisserie chicken, off the bone, cut into bite sized pieces added in step 3.
