Cheesy Bacon Stuffed Mushrooms - Cass's image

Love, love, love these mushrooms. They are loaded with flavor! When I make these for a party they are always first to go. Hope you try em. My photos

Number Of Ingredients 9

5 oz cream cheese, softened
12 large mushrooms - 6 stems diced
4 - 5 slice bacon, cooked and crumbled - or i used real bacon bits
2 clove garlic, minced
1 1/2 Tbsp red onion, diced fine
1/2 c shredded cheddar cheese
pinch red pepper flakes ( optional )
1 Tbsp fresh or dried parsley
3 Tbsp grated parmesan to top ( optional )

Steps:

  • 1. Preheat oven to 350 degree F. Spray baking dish large enough to hold 12 mushrooms. I used my mini muffin tin. They stay in place nicely.
  • 2. In a small skillet, add about a tbsp olive oil. Over med heat; add the minced stems and onion. Saute for about 3 minutes, or until all the liquid has evaporated from the stems, and onions are soft. Add the minced garlic, continue cooking for another minute or so. Add a bit more oil if necessary. Set aside to cool.
  • 3. In the meantime, clean mushrooms, brushing off any dirt softly with a paper towel.
  • 4. In a medium bowl; stir softened cream cheese with remaining ingredients.
  • 5. Spoon about a tablespoon full into each mushroom cap. I then dipped the top of the mushroom into the Parmesan cheese.
  • 6. Bake for 18 - 20 minutes. Enjoy!
