Cheddar Ranch Potatoes image

I made this on the fly for a work pot luck and was asked to make it every time since! You can tweak it using more or less of one ingredient or another to your taste. I have also made it successfully in a crock pot. You can make with bacon in or out! Do not salt - the ranch makes it plenty salty. This is great with ham or steak...

1 bag frozen hash brown potatoes
1 bottle ranch dressing
2 c grated cheddar cheese
1/2 c crumbled bacon (optional)

Steps:

  • 1. Heat oven to 350. Grease 2 QT covered casserole dish.
  • 2. Break up any large clumps of frozen potatoes while still in the bag by massaging or tap gently on the counter. Pour loose potatoes into large mixing bowl. Moisten potatoes with ranch dressing and stir well to coat. Stir in cheese and mix well again. You may mix in a separate bowl, but I just combine in the casserole dish.
  • 3. You may add in crumbled bacon if desired. In this photo I have just sprinkled some on top for a layer of crunch.
  • 4. Cover and bake for 1 1/2 hours until completely heated through. Remove lid for the last 5-10 minutes for a nicely browned cheese on top. I have also made this in a crock pot successfully.
