Cheddar Corn Muffins image

I didn't have any cornmeal to make cornbread and did not want to venture out to the store so this is what I came up with to serve with my Crockpot Pumpkin Turkey Chili. They were hubby and son approved.

Number Of Ingredients 7

1 can(s) whole kernel corn, drained (liquid reserved)
1/4 c butter, melted
2 c biscuit mix
1/3 c dry milk powder
3 Tbsp sugar
1 c cheddar cheese, shredded
1 egg, beaten

Steps:

  • 1. Drain corn reserving liquid. Add to melted butter to measure 2/3 cup liquid.
  • 2. Combine biscuit mix, dry milk, and sugar.
  • 3. Stir in corn and cheese. Add liquid ingredients and egg. Blend lightly.
  • 4. Fill greased muffin cups 2/3 full. Bake 400* for 25 minutes.
  • 5. Remove from pan immediately.
