CHA SHUI-CHINESE ROAST PORK-HYDE PARK image

Yield 3 pounds roast port

Number Of Ingredients 10

2-3 lb pork tenderloin
3 cloves garlic-minced
2 T sugar
2 T light soy sauce
2 T dark soy sauce
1/2 c Hoi Sin sauce
1/2 c sherry or Shao Hsing Chien
1/3 c sesame oil
1/2 c honey or corn syrup
1.5 t red food coloring (oprional

Steps:

  • Cut pork into long strips about 1 by 2 inches. Mix all ingredients together except pork, sesame oil and syrup/honey. Soak/marinate pork at least an hour at room temp turning occasionally. Preheat oven to 375. Spear pork with metal skewers and put on rack over shallow pan holding 1/2 inch of water to catch drippings and prevent smoking. Brush on sesame oil while roasting. When almost done, brush corn syrup on honey very generously on both sides of pork, turning often. Takes about 45 minutes. Serve hot or cold. Make a lot and freeze--keeps well for months.
